This is the actual digital thermometer we use for our small chocolate business. We also use an infrared thermometer but only to get us in the ball park before getting messy with the digital probe style thermometer. Chocolate makers and chocolatiers successfully use infrared thermometers, but our infrared thermometer has a +/- 5 degree accuracy so we use our Javelin digital instant read thermometer for precision readings while tempering. What we really like about Lavatools' Javelin thermometer, besides the +/- .9 F accuracy and ease of use, is that it is very quick and responsive, has an integrated magnet so we just stick it to fridge when not using, and has a built in ring for hanging on a lanyard. For the price, reliability, and ease of use, we recommend this thermometer for the hobbyist or small chocolate maker/chocolatier.
